Grand Cayman has been one of my favorite cruise ports. I dunno about it being quiet tho due to all of the cruise lines going there. Sting ray city is amazingly cool.

Anything in the southern caribbean would be a bit more isolated.

How long are you gone for? I'm more of an active vacation guy, not much for laying on the beach. It is very touristy at the ports, but I really liked Cozumel. Great diving, some really nice resorts which have always been pretty secluded, and a lot of options on things to do. Can also catch a ferry over to Cancun and check out some of the ruins.
