Perhaps for some people the "challenge" of being a great healer without the "crutches" is part of the fun.

For some people using these type of UI crutches takes the fun out of playing the game.
There are literally enough UI mods that as a priest you could basically reactively auto target / auto heal / auto cure / auto everything for the whole raid.
You may find that fun, but I'm just trying to tell you that some people don't. I also understand that for some people the "fun" is just completing MC no matter what they have to install / use to do it. For others the fun is playing the game.
